Green Chile Pork Stew




2 lbs pork stew meat

3 Tbsp olive oil

3 large celery stalks, sliced

3 large tomatoes, diced

1 small red pepper, diced

5 green chile peppers, chopped

2 garlic cloves, minced

4 cups chicken broth

10 oz jar green chile salsa

salt and pepper to season.




Heat oil over medium heat. Brown pork and season with salt and pepper.

Remove pork and place into a large pot.

Add 1 cup water to pan that pork was cooked in.

Turn on high and scrape browned oil off of the bottom of pan.

Add to large pot.

Add celery, tomatoes, peppers, garlic, chicken broth and chile salsa to large pot.

Cover and simmeron medium low for 2 hours.


6 servings.
