Spicy Cuban Beef

1 1/2 lb. lean, whole top round steak

1 (16oz.) can petite diced tomatoes

2 celery ribs, sliced

1 onion chopped

1/2 tsp. garlic powder

1/4 cup raisins

1/3 cup water

2 Tbsp. vinegar

1/2 tsp. chili powder

1/2 tsp. salt

1/4 tsp. pepper

1/3 cup olives, sliced

4 cups rice, cooked


Cut beef into 1 inch cubes. Spray skillet with cooking spray. Add beef; brown over high heat turning frequently. Add remaining ingredients, except olivesand rice. Cover and simmer 1 hour, or until meat is tender. Stir in olives and heat. Serve over cooked rice.


Meal time: 1 hour 15 minutes

Serves: 6
