Pretty simple. Keep in mind: a lot of the ingrediants are to taste.

INGREDIANTS:

2 packets ramen noodles (flavoring doesn't matter because you'll throw the seasoning packet away!!)

1 lime

1/3 cup peanut butter

Boneless, skinless chicken breast, thawed and diced (amount depends on how much meat you want in your noodles...if any...)

Soy sauce (once again...to taste)

Cayenne pepper (to taste...I use a LOT because I like it spiiicy!)

Garlic (I use the kind that comes in a jar...and I use lots of that, too, but it's all up to your own taste buds)

Oil for frying

Alrighty, use a frying pan to brown the chicken in the oil. You can go ahead and add the garlic, cayenne and soy sauce, too. Stir things around once in a while. When the chicken is about done, you can add the peanut butter, and stir. You're done with this part once the chicken is cooked through and the peanut butter melts and becomes 'saucy.'

Meanwhile, I put the ramen noodles in a pot of boiling water for 3 or so minutes (as directed on the packet). Drain the water. Put the noodles back in the pot.

And now you're ready to combine the two! Dump the chicken & sauce into the pot of noodles, stir around, and squeeze lime juice over the top. All done!

If you like sautee and peanut sauces, you'll probably like this stuff. Enjoy!

Tembleque

Tembleque

(coconut custard dessert)

Ingredients:

(serves 8 or more)

(A)

1 13.5 oz can coconut milk

1/2 cup sugar

1/2 cup cornstarch

1/4 tsp salt

1 tsp vanilla flavor

Procedure:

Blend all ingredients included in (A) thoroughly. The fall pumpkin harvest offers another twist on the classic, this delicious recipe for pumpkin cheesecake.

RECIPE

Pumpkin Cheesecake

Serves 10 to 12

For the crust:

8 ounces gingersnap cookies (about 32 cookies), broken into pieces

1/2 cup finely chopped pecans

4 tablespoons unsalted butter, melted

2 tablespoons sugar

1 teaspoon ground cinnamon

For the filling:

3 tablespoons all-purpose flour

1 1/2 teaspoons ground ginger

1 teaspoon ground cinnamon

1/4 teaspoon freshly grated nutmeg

4 eight-ounce packages cream cheese, room temperature

1 1/2 cups sugar

1 fifteen-ounce can unsweetened pumpkin purée

3 tablespoons bourbon

2 teaspoons pure vanilla extract

4 large eggs

Whipped cream, for serving (optional)

1. Preheat oven to 325°. Make the crust: Place gingersnaps in the bowl of a food processor, and process until finely ground. Add pecans, melted butter, sugar, and cinnamon. Process just until combined and the mixture holds together. Transfer the cookie mixture to a 9-inch nonstick springform pan, and pat out evenly to make the crust, lining the sides of the pan about 1 1/2 inches of the way up. Bake for 10 minutes. Cool completely on a wire rack.

2. Make the filling: In a small bowl, whisk together flour, ginger, cinnamon, and nutmeg; set aside. In the bowl of an electric mixer fitted with the paddle attachment, beat the cream cheese and sugar on medium speed until light and fluffy, about 2 minutes. Add pumpkin, bourbon, vanilla, and flour mixture. Beat to combine. Add eggs, one at a time, beating to incorporate after each addition.

3. Pour batter into prepared crust. Wrap the outside of the springform pan with a double layer of aluminum foil. Place in a roasting pan. Add enough hot water to come halfway up the sides of the springform pan. Bake until cake is set in the center, about 1 hour and 45 minutes.

4. Remove from water, and cool on a wire rack. Remove foil, and refrigerate for at least 4 hours and up to overnight. To unmold, release the sides of the pan, and slide onto a serving plate. Serve with whipped cream

For more pumpkin recipes check out : http://buzz.yahoo.com/buzzlog/43189/30-ways-to-eat-a-pumpkin

Pumpkin Juice

Pumpkin Juice

2 cups fresh pumpkin, peeled and chopped up into chunks

2 cups apple juice

1/2 cup pineapple juice

honey, to taste

cinnamon, ginger, nutmeg and/or allspice (all ground, to taste)

Juice the pumpkin pieces by squeezing through a cheesecloth or using a juicer if you have one. Place 1 wonton wrapper on the work surface. Brush the edges of the wrapper lightly with egg. Spoon 1 tablespoon of chocolate-hazelnut spread into the center of the wrapper. Fold the wrapper diagonally in half over the filling and press the edges of the wrapper to seal. Place the ravioli on the prepared baking sheet. Repeat with the remaining wonton wrappers, egg, and chocolate-hazelnut spread.

Preheat the oven to 200 degrees F. Add enough oil to a heavy large frying pan to reach a depth of 2 inches. Heat the oil over medium heat to 350 degrees F.

Working in batches, carefully add the ravioli to the hot oil and cook until they are golden brown, about 45 seconds per side. Using a slotted spoon, transfer the ravioli to a plate lined with paper towels to drain. Then, transfer the cooked ravioli to another baking sheet and keep them warm in the oven while frying the remaining ravioli. (The fried ravioli can be prepared 1 day ahead. Cool them completely, then cover and refrigerate. Before serving, place them on a baking sheet and rewarm in a preheated 375 degrees F oven just until they are heated through, about 7 minutes.) Sprinkle with powdered sugar
